Ingredients:
- 4 green plantains (matoke), peeled and sliced
- 1 Ugandan vanilla bean (seeds scraped)
- 1 onion (chopped)
- 2 tomatoes (diced)
- 1 cup beef or vegetable broth
- 1 tsp turmeric
Method:
1. Sauté onions, tomatoes, and vanilla seeds until soft.
2. Add plantains, broth, and turmeric. Simmer until tender.
Ugandan Twist:
Vanilla adds depth to the earthy matoke.
