Vanilla Bean Groundnut Sauce (For Rice or Chapati)

Ingredients:
- 1 cup peanut butter
- 1 Ugandan vanilla bean (seeds scraped)
- 1 onion (chopped)
- 2 tomatoes (blended)
- 1 cup coconut milk
- Salt to taste
Method:
1. Sauté onions until golden. Add tomatoes and cook until thickened.
2. Stir in peanut butter, coconut milk, and vanilla seeds. Simmer for 10 minutes.
